Bruschetta

Preparation time: 15 minutes

Ingredients
6 slices toasted whole grain bread*
1 tablespoon olive oil
1 garlic clove, split
6 -8 Roma tomatoes (1-1/2 pounds), peeled, seeded, and very coarsely chopped)
About 3 basil leaves, coarsely chopped
Freshly ground black pepper to taste
1/4 cup organic Parmesan cheese, freshly grated

Preparation Instructions
1. Toast the 6 slices of bread then rub the top of the bread with the garlic clove. Finally brush the top of the bread with the olive oil. Cut the bread in quarters and set aside.
2. Toss the tomatoes with the chopped basil. Season to taste with pepper.
3. Spoon the tomato mixture in small mounds on top of the toast. Sprinkle with the Parmesan cheese. Makes 6 servings.

*12 slices of a whole grain baguette can be substituted.
